2 bunches of greens, washed - suggestions below
1-3 TBS lemon juice
1/2 cup sunflower seeds (or pumpkin seeds, pine nuts, walnuts, etc)
4 TBS (1/4 cup) olive oil
1-2 small cloves garlic (or garlic scapes)
1/4-1/2 tsp salt
Grind or finely chop leaves with 1+ TBSP lemon juice (to taste, and the liquid helps the greens mix in food processor). Separately, grind seeds with olive oil, garlic and salt. Mix together in a saucepan and simmer until garlic loses raw smell. Serve with pasta, potatoes, fish, on bread or crackers, etc.
Depending on the greens used, you may need to add extra lemon juice or olive oil. For a cheesy pesto, add parmesan cheese or nutritional yeast after cooling.
